THREE OYSTER MIGNONETTES

Three Oyster Mignonettes

Each makes enough for four dozen oysters

Basic Mignonette:
1/2 cup red wine vinegar
2 T minced shallots
Fine sea salt and freshly ground pepper

In a small bowl, combine all the ingredients and stir. Serve along side freshly shucked raw oysters.

Maine Blueberry Mignonette:
1/2 cup red wine vinegar
1/2 tsp white vinegar
1/2 tsp fresh lemon juice
1 T minced shallot
2 T roughly chopped Maine blueberries
1 1/2 tsp sugar
Fine sea salt and freshly ground pepper

In a small bowl, combine all the ingredients and stir. Serve along side freshly shucked raw oysters.

Ginger Maple Mignonette:
1/2 cup apple cider vinegar
1 T minced shallot
1 T grated, peeled, fresh ginger
1 T pure maple syrup
Fine sea salt and freshly ground pepper

In a small bowl, combine all the ingredients and stir. Serve along side freshly shucked raw oysters.
