These quintessential, cocktail-party favorite scallops are sure to be the first empty plate at your New Year's Eve celebration!
1lb scallops, feet removed
1 lb bacon
2 Tbsp unsalted butter, melted
- Preheat oven to 425F. Set a wired rack in a rimmed baking sheet.
- Wrap bacon around the outside of each scallop. If bacon strips are too wide, feel free to slice them down the center to better fit your scallops.
- Transfer to prepared baking sheet and drizzle with melted butter.
- Roast for about 18-20 minutes until bacon and scallops are cooked through.
- Serve warm!
